Cucumber Salad with Red Onion

Ingredients
  

  • 3 large cucumbers
  • 0.5 cup paper-thin sliced red onion
  • 3 tablespoons rice vinegar
  • 1 pinch salt
  • agave nectar or 10-20 drops stevia for low carb version

Instructions
 

  • Thinly slice the cucumbers on a diagonal, and toss with the sliced red onion. Set aside. Blend the rice vinegar, salt, and a drizzle of agave nectar if using. Toss with the cucumbers and onions, and serve.  (Recipe♦340)
