Cucumber Salsa

Ingredients
- 3 large cucumbers peeled or unpeeled*, diced
- 0.25 cup red onion minced
- 0.5 bunch fresh cilantro chopped
- 6 drops stevia or to taste
- 3 teaspoons toasted sesame oil
- 3 tablespoons fresh lime juice
- 2 tablespoons fresh ginger grated
- 2 tablespoons minced jalapeno pepper optional
Instructions
- Combine the cucumbers, onion, jalapeno (if using) and cilantro in a bowl and set aside. Whisk together Stevia, sesame oil, lime juice and grated ginger. Toss with salsa ingredients. (Recipe♦341)
Notes
*To decide if you should peel a cucumber, taste it. If it’s bitter, peel it. If it’s waxed, peel it. Ideally you’ll have fresh, organic cukes that don’t need peeling (although you might want to, for digestive reasons).
