Cucumber Salsa

Ingredients
  

  • 3 large cucumbers peeled or unpeeled*, diced
  • 0.25 cup red onion minced
  • 0.5 bunch fresh cilantro chopped
  • 6 drops stevia or to taste
  • 3 teaspoons toasted sesame oil
  • 3 tablespoons fresh lime juice
  • 2 tablespoons fresh ginger grated
  • 2 tablespoons minced jalapeno pepper optional

Instructions
 

  • Combine the cucumbers, onion, jalapeno (if using) and cilantro in a bowl and set aside. Whisk together Stevia, sesame oil, lime juice and grated ginger. Toss with salsa ingredients. (Recipe♦341)

Notes

*To decide if you should peel a cucumber, taste it. If it’s bitter, peel it. If it’s waxed, peel it. Ideally you’ll have fresh, organic cukes that don’t need peeling (although you might want to, for digestive reasons).
