Curry Base

Servings 1 cup

Ingredients
  

  • 2 teaspoons cardamom
  • 2 tablespoons coriander
  • 3 tablespoons cumin
  • 1 tablespoon chili powder
  • oil or preferred fat to coat well the bottom of a large frying pan
  • 2 onions processed or minced
  • 6 cloves garlic processed or minced
  • 2" piece ginger processed or minced

Instructions
 

  • Coat the frying pan generously with preferred fat or oil. Heat and add in powder spices and stir constantly for about a minute, they will become fragrant, don’t let them get smoky. Add the onion, ginger, and garlic and cook for 3 minutes, stirring a few times.  (Recipe #349)
