Dandelion, Jicama and Orange Prebiotic Salad

Ingredients
  

  • 1 jicama diced - or use a can of water chestnuts
  • 0.5 bunch dandelion greens chopped
  • 3 oranges peeled and chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar more to taste
  • salt and freshly ground black pepper to taste

Instructions
 

  • Combine jicama, greens and oranges. Drizzle with oil and vinegar. Salt and pepper to taste. Toss gently and serve.  (Recipe♦358)
