Dandelion, Jicama and Orange Prebiotic Salad

Ingredients
- 1 jicama diced - or use a can of water chestnuts
- 0.5 bunch dandelion greens chopped
- 3 oranges peeled and chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar more to taste
- salt and freshly ground black pepper to taste
Instructions
- Combine jicama, greens and oranges. Drizzle with oil and vinegar. Salt and pepper to taste. Toss gently and serve. (Recipe♦358)
