Dressing for Chicken Salad

You can use this dressing for about 2 lbs. of cubed, roasted chicken or turkey. We added 6 ribs of sliced celery and a cup of chopped walnuts.

Ingredients
  

  • 0.5 cup organic or preferred mayonnaise
  • 1 lime, juiced
  • 1 teaspoon flavorful vinegar to taste
  • 2 shallots, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons walnut or preferred salad oil
  • salt to taste
  • pepper to taste

Instructions
 

  • Combine the ingredients, except the oil, in a food processor. While it's running, slowly drizzle in 1-2 tablespoons of oil to achieve the desired consistency. (Recipe♦379)
