Ingredients
- 12 hard-boiled eggs
- 2 avocados peeled and diced
- 2 tablespoons red onion minced
- 3 tablespoons parsley or dill or favorite herbs
- 1 lemon juiced
- 0.25 cup olive oil
- salt and pepper to taste
Instructions
- Sprinkle some lemon juice on the avocado to keep it from browning while you prepare the rest. Combine the lemon juice, olive oil, salt and pepper to make the dressing. Mash the eggs and add the dressing. Fold in the avocado, onion and herbs, and serve. (Recipe♦388)
