Fava Bean Puree

Adapted from a recipe found on www.bonappetit.com
We served this at our "Healing Spices" Suppers meeting featuring turmeric with Turmeric Cream and Roasted Fall Vegetables.

Ingredients
  

  • 4 cups fava beans fresh or frozen
  • 0.25 cup olive oil
  • 0.25 cup freshly squeezed lemon juice
  • salt to taste

Instructions
 

  • Cook fresh or frozen favas in a boiling pot of salted water for 3 mins. Transfer the beans to a bowl of ice water, then peel each one by pinching off the outer skin (the bean should pop right out).In a food processor, puree the fava beans with olive oil and lemon juice until smooth.
