Favorite Brown Rice & Lentil Stew

Ingredients
- 0.75 cup brown rice uncooked
- 0.5 cup lentils dry, rinsed
- 0.5 cup onion chopped
- 0.5 cup celery chopped
- 0.5 cup carrots chopped
- 0.25 cup parsley leaves
- 1 teaspoon Italian Seasoning
- 1 clove garlic
- 1 bay leaf
- 2.5 cups stock chicken, vegetable, etc
- can (14½ oz) whole, peeled tomatoes
- 1 tablespoon apple cider vinegar
Instructions
- Combine all ingredients and 2 cups water in Dutch oven or large saucepan; bring to a boil. Reduce heat and simmer, uncovered, stirring occasionally, for an hour, or until rice is tender. Remove and discard bay leaf. (Recipe♦399)
