Favorite Brown Rice & Lentil Stew

Ingredients
  

  • 0.75 cup brown rice uncooked
  • 0.5 cup lentils dry, rinsed
  • 0.5 cup onion chopped
  • 0.5 cup celery chopped
  • 0.5 cup carrots chopped
  • 0.25 cup parsley leaves
  • 1 teaspoon Italian Seasoning
  • 1 clove garlic
  • 1 bay leaf
  • 2.5 cups stock chicken, vegetable, etc
  • can (14½ oz) whole, peeled tomatoes
  • 1 tablespoon apple cider vinegar

Instructions
 

  • Combine all ingredients and 2 cups water in Dutch oven or large saucepan; bring to a boil. Reduce heat and simmer, uncovered, stirring occasionally, for an hour, or until rice is tender. Remove and discard bay leaf.  (Recipe♦399)
