Fennel Slaw

Ingredients
- 1 large fennel bulb or two small ones
- 2 red peppers
- 4 carrots
- 1 cucumber
- 1 Daikon radish 3" piece
- 1 small red onion
- 1 bunch fresh parsley chopped
- 1 cup mung beans or other sprouts
- 0.25 cup sesame seeds toasted
- 0.25 cup sunflowers seeds toasted
- 0.25 cup slivered almonds toasted
Instructions
- Julienne all vegetables (first 6 ingredients) using a food processor OR slice very thin with a sharp knife. Combine vegetables with remaining ingredients. Toss with Lemon Garlic Dressing and serve. Optional: Add 1 bunch Swiss chard or kale, rolled and sliced thinly into ribbons OR 1 bunch/bag of spinach, thinly sliced. (Recipe♦403)
