Fennel Slaw

Servings 8 servings

Ingredients
  

  • 1 large fennel bulb or two small ones
  • 2 red peppers
  • 4 carrots
  • 1 cucumber
  • 1 Daikon radish 3" piece
  • 1 small red onion
  • 1 bunch fresh parsley chopped
  • 1 cup mung beans or other sprouts
  • 0.25 cup sesame seeds toasted
  • 0.25 cup sunflowers seeds toasted
  • 0.25 cup slivered almonds toasted

Instructions
 

  • Julienne all vegetables (first 6 ingredients) using a food processor OR slice very thin with a sharp knife. Combine vegetables with remaining ingredients. Toss with Lemon Garlic Dressing and serve. Optional: Add 1 bunch Swiss chard or kale, rolled and sliced thinly into ribbons OR 1 bunch/bag of spinach, thinly sliced.  (Recipe♦403)
