Garden Herb Tabouli

Ingredients
  

  • 1 cup dry quinoa
  • 1 teaspoon salt
  • 1 tablespoon preferred fat or oil
  • 1 package cherry tomatoes halved
  • 2 stalks celery chopped
  • 2 cups mixed herbs and greens from the garden including parsley, plus any combination of chives, dill, mint, sorrel, arugula*
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • salt and pepper to taste

Instructions
 

  • Prepare the quinoa according to package directions, including 1 teaspoon salt and 1 tablespoon preferred oil or fat. Toss with a fork and cool.Roughly chop the herbs and greens. Mix quinoa with the vegetables, herbs and greens.Whisk together the olive oil and lemon juice. Toss with the salad and taste before adding pepper and any more salt.  (Recipe♦427)

Notes

*Out of season: Use a bunch of parsley.
