Gina's Vegan Lentil Burgers

Servings 20 patties

Ingredients
  

  • 8 carrots shredded in food processor
  • 2 sweet onions shredded in food processor
  • 1 pound dry lentils cooked until soft, then drained
  • 8 cloves garlic minced
  • 1 sweet potato cooked, then mashed up
  • 1 cup salsa
  • salt and pepper to taste
  • garlic powder to taste
  • olive oil to coat pan

Instructions
 

  • Preheat oven to 350°F. Combine all ingredients and form into patties. Bake on a cookie sheet for about 20 mins. Carefully flip over the patties and cook an additional 20 - 30 mins.                 These burgers make a delicious and protein-rich salad topping:  Place mixed greens, shredded carrots and sliced bella mushrooms in a bowl and dress as you wish. Chop or crumble 1or2 patties on top of the salad for a nice crunch.  (Recipe♦432)
