Goat Cheddar Quiche

Ingredients
  

  • 1 red pepper chopped
  • 1 medium yellow onion chopped
  • 1 package spinach washed and drained
  • olive oil
  • 0.5 cup almonds processed until like bread crumbs
  • 6 ounces goat cheddar grated
  • 1 cup plain goat yoghurt
  • 12 medium sized eggs

Instructions
 

  • Coat the bottom of a frying pan with olive oil. Saute pepper and onion until translucent. Add spinach and toss until just wilted. Set aside.In a separate bowl, mix eggs and yoghurt.Coat a pie pan with a thin coating of olive oil. Swirl almond crumbs around the pan until it forms a nice, uniform coating.  Place the vegetable mix in the pie pan. Add grated cheddar, followed by egg mixture.Bake at 375°F for about a 45 – 50 mins or until a knife inserted comes out clean.  (Recipe♦442)
