Golden Beet & Cabbage Slaw with Pomegranate

Ingredients
- 1 small head cabbage
- 2 golden beets
- seeds of one pomegranate cleaned of tough bits
- 0.666667 cup olive oil
- 0.666667 cup combined vinegar and/or lemon juice including a sweet vinegar like apple cider or other fruit vinegar
- 1 teaspoon salt or to taste
- 5 drops stevia
- 1 clove garlic
Instructions
- Remove the pomegranate seeds and pick out the hard white bits. You can slice it and poke the seeds out. Set aside.Shred the cabbage and beets in a food processor. Set aside.Switch to the S blade of the food processor and process the dressing ingredients (oil through garlic).Combine the vegetables and seeds, and toss with the dressing. If it doesn’t have the right balance of flavors, it usually needs a little more salt, lemon juice or sweet note like stevia. (Recipe♦444)
