Kale Salad with Feta, Currants and Walnuts

Ingredients
- 3 bunches kale rubbed
- 1 teaspoon coarse salt
- 1 lemon juiced and zested
- 0.5 cup olive oil
- 1 cup currants
- 1 cup chopped walnuts
- goat feta to taste, crumbled
- 1 cup Greek olives
Instructions
- Chop the kale and place it in a large bowl. To rub it, sprinkle on ½ to one teaspoon of coarse salt. Lift and rub the kale through your fingers for one minute until the color comes up bright green.In a small bowl, whisk the lemon juice, lemon zest, and olive oil to make a dressing.Fold the remaining ingredients into the kale, and toss the salad with the dressing.
