Lemon Macadamia Energy Bites

Enjoy these bites straight from the refrigerator or freezer for nourishing, satiating fats, instead of reaching for a high-carb "pick-me-up!"

Ingredients
  

  • 6 ounces coconut oil
  • 2 ounces cocoa butter or sub with additional 2oz coconut oil
  • 2 ounces coconut cream from the top of a can of coconut milk
  • 3 tablespoons almond flour
  • 3 tablespoons coconut flour
  • dash vanilla
  • 1 medium lemon, juiced and zested
  • liquid stevia or maple syrup to taste
  • 0.5 cup shredded coconut
  • 0.5 cup macadamia nuts
  • pinch sea salt

Instructions
 

  • In a small pan over low heat, melt coconut oil, coconut cream, and cocoa butter (if using). When cool enough to handle, pour mixture in the blender and add flours, vanilla, lemon juice/zest. Add stevia to taste by adding drops (try 10 and taste, and increase if desired). Or use maple syrup instead, starting with 2 tablespoons and increasing to taste. Add shredded coconut and macadamia nuts. Pulse a few times to combine and lightly chop. Portion into bite-sized balls or press into a silicone mold and sprinkle with sea salt. Freeze until firm.
