Lemony Quinoa

Ingredients
  

  • 0.25 cup pine nuts toasted in a dry skillet
  • 1 cup quinoa
  • 2 cups water
  • salt to taste
  • 0.25 cup lemon juice
  • 2 celery stalks chopped
  • 0.25 red onion chopped
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon cumin
  • 1 bunch parsley chopped

Instructions
 

  • In a saucepan, bring the water, salt, and quinoa to boil, reduce to medium and cook until quinoa is tender, about 10 mins. Combine the quinoa with the rest of the ingredients, and salt and pepper to taste.  (Recipe♦534)
