Lentil Dahl with Tofu

Ingredients
- 2 tablespoons olive oil
- 0.5 red onion minced
- 2 cloves garlic minced
- 1" piece of ginger minced
- 1 cup cooked lentils
- 3 plum tomatoes diced
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- salt and pepper to taste
- 1 package firm or extra firm tofu diced
- 0.5 bunch cilantro minced
Instructions
- In a large saute pan, heat the oil. Add the onion, garlic and ginger and saute until the onion is translucent. Add the lentils, tomatoes, coriander, cumin, salt, and pepper. Mix well to combine. Let simmer for 5 mins. Add the tofu and cook for another 2 - 3 mins. Garnish with cilantro. (Recipe♦538)
