Lentil & Red Pepper Soup

Servings 4 servings

Ingredients
  

  • olive oil or prefered fat to coat the pan
  • 1 onion minced
  • 1 red pepper chopped
  • 2 carrots chopped
  • 2 stalks of celery chopped
  • 1 pound green lentils cooked according to package directions
  • 4 cups vegetable broth more if needed
  • hot sauce to taste
  • salt and pepper to taste

Instructions
 

  • Generously coat the bottom of a soup pot with olive oil or preferred fat. Add the onion and other vegetables, and cook until the onion is slightly browned. Add the cooked lentils and broth and simmer for 20 mins or so. Season with hot sauce, and salt and pepper to taste.  (Recipe♦535)
