Lentil Soup

Ingredients
- 1 package lentils cooked according to package directions
- 7 plum tomatoes chopped
- 4 small red onions chopped
- 3 cloves garlic minced
- olive oil to coat bottom of pan
- 7 small squash patty pan or small zucchini, chopped
- 12 mushrooms chopped
- 6 cups chicken broth vegetable broth for vegan version
- 1 teaspoon curry paste
- salt to taste
Instructions
- Coat the bottom of a saute pan with olive oil. Saute onions until translucent. Add garlic and saute until fragrant. Add remaining vegetables and cook until slightly softened. Add prepared lentils and broth, and simmer for a few minutes. Add curry paste and salt to taste, and serve. (Recipe♦540)
