Living Cauliflower Couscous

The main ingredient is cauliflower, processed so that it is the texture of couscous and soaks up the flavors of the other ingredients. The cauliflower is raw but if you prefer, you can roast or steam the riced cauliflower to desired tenderness.

Ingredients
  

  • 1 head of cauliflower chopped in a food processor or grated to resemble grains
  • 1 bunch cilantro chopped
  • 1 bunch curly parsley leaves chopped
  • 1 bunch spearmint leaves chopped
  • 2 pints sungold or cherry tomatoes halved
  • 8 ounces Mediterranean olives chopped
  • 2 lemons juiced
  • 3 tablespoons olive oil
  • fresh ground pepper
  • salt to taste

Instructions
 

  • Combine cauliflower, herbs, tomatoes and olives in a large bowl and set aside. Whisk together lemon juice, olive oil and pepper. Pour over vegetables and toss to coat. Carefully salt to taste, as the olives may be very salty already.  (Recipe♦545)
