Lots-O-Bean Salad

Easy, cool, and satisfying. A summer favorite. 

Ingredients
  

  • 3 cans organic beans such as cannelloni, kidney, black beans, or garbanzo/chickpea
  • 1 red onion, diced
  • 2 celery stalks, chopped finely
  • 0.5 bunch parsley
  • For the dressing:
  • 0.5 cup apple cider vinegar
  • 1 tablespoon sweet vinegar
  • 0.25 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 tablespoon water

Instructions
 

  • Rinse and drain the beans in a colander. Chop and stir the veggies. You can substitute or add more celery, zucchini, kale, or other fresh veggies you have on hand. Set aside.Make the dressing by mixing the vinegars, oil, garlic, salt and water. Stir vigorously. Dress, mix, and serve.   (Recipe♦546)
