Mashed Cauliflower

Ingredients
  

  • 2 heads of cauliflower washed and cut into large pieces
  • 2 tablespoons olive oil or coconut oil
  • 0.5 teaspoon sea salt
  • black pepper to taste
  • 4 cloves garlic smashed; optional
  • 4 carrots chopped; optional

Instructions
 

  • Steam the cauliflower pieces (and optional garlic and carrots) until very tender. Puree in a food processor, or simply mash with a potato masher or hand blender. Add in oil, salt and pepper.                                                                                                                                                                                                                                        To eat later, reheat in a casserole dish in a 350° oven for 20 minutes.   (Recipe♦562)
