Massaged Kale Salad

Ingredients
  

  • 1 large bunch curly kale
  • 0.5 lemon juiced
  • 2 tablespoons olive oil
  • 0.125 teaspoon salt
  • pepper to taste

Instructions
 

  • Tear spines from kale leaves, rinse and spin. Tear or cut into bite-sized pieces. Sprinkle with lemon, oil, and salt. Massage (lightly knead) until slightly softened. Add more lemon juice, oil, salt and/or pepper before serving as needed.  Also consider a variety of additions which you can toss in right before serving or serve on the side (e.g. grapefruit, avocado, vegan cheesy breadcrumbs).  (Recipe #564)
