Meal in One Salad (Vegan & Goat Cheese Versions)

Ingredients
  

  • 2 cups wild rice cooked
  • 2 celery stalks finely sliced
  • 1 red pepper diced small
  • 1 cup sprouts such as mung beans
  • 1 cup almonds coarsely chopped
  • 1 fresh cilantro chopped
  • 1 spinach coarsely chopped
  • 1 tart apple diced small
  • 1 lemon juice or to taste
  • 1 goat milk cheddar shredded; this is optional

Instructions
 

  • Combine all ingredients except the apple and lemon juice, and place in a large shallow bowl. Sprinkle a little lemon juice on the apple as soon as you dice it to delay browning. Add to the salad. Serve with Garlic Dijon Dressing.  (Recipe #566)
