Meal in One Salad (Vegan & Goat Cheese Versions)

Ingredients
- 2 cups wild rice cooked
- 2 celery stalks finely sliced
- 1 red pepper diced small
- 1 cup sprouts such as mung beans
- 1 cup almonds coarsely chopped
- 1 fresh cilantro chopped
- 1 spinach coarsely chopped
- 1 tart apple diced small
- 1 lemon juice or to taste
- 1 goat milk cheddar shredded; this is optional
Instructions
- Combine all ingredients except the apple and lemon juice, and place in a large shallow bowl. Sprinkle a little lemon juice on the apple as soon as you dice it to delay browning. Add to the salad. Serve with Garlic Dijon Dressing. (Recipe #566)
