Mediterranean Tuna Salad

Ingredients
  

  • 2 cans tuna aim for sustainably fished, pole-caught; Albacore is a good brand
  • 1 small onion diced
  • 2 celery stalks
  • 0.25 cup oil-cured olives
  • 2 tablespoons olive oil
  • 2 tablespoons mayonaise optional, see recipe: "Homemade Mayonnaise" for Whole30
  • 1 teaspoon dried tarragon

Instructions
 

  • Chop onion, celery, olives. Drain tuna. Mix tuna, onion, celery, olives & tarragon in a large bowl.  Top with olive oil (and optional mayonnaise).  Mix well and serve on lettuce leaves.
