Mediterranean Tuna Salad

Ingredients
- 2 cans tuna aim for sustainably fished, pole-caught; Albacore is a good brand
- 1 small onion diced
- 2 celery stalks
- 0.25 cup oil-cured olives
- 2 tablespoons olive oil
- 2 tablespoons mayonaise optional, see recipe: "Homemade Mayonnaise" for Whole30
- 1 teaspoon dried tarragon
Instructions
- Chop onion, celery, olives. Drain tuna. Mix tuna, onion, celery, olives & tarragon in a large bowl. Top with olive oil (and optional mayonnaise). Mix well and serve on lettuce leaves.
