Paleo Almond Chicken Fingers

Ingredients
- 1 pound boneless, skinless chicken breast
- 1 cup almond meal
- 1 tablespoon paprika
- 0.5 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 1 teaspoon sea salt
- 2 eggs lightly beaten
- olive oil cooking spray
Instructions
- Preheat oven to 375 degrees. Slice chicken breasts into long strips, 1-2 inches wide.Mix together almond meal, paprika, garlic, cumin, cayenne, pepper, and salt.Dredge each piece of chicken in egg and then coat with almond spice mixture. Place pieces on a cookie sheet greased with cooking spray. Bake for 20-25 minutes, until golden. (Recipe #602)
