Paleo Bok Choy Salad

Ingredients
  

  • 8 baby bok choy cleaned and sliced thin on diagonal
  • 8 celery stalks cleaned and sliced thin on diagonal
  • 0.5 cup olive oil
  • 0.25 cup fresh lime juice
  • Dressing:
  • 1 teaspoon mustard
  • 1 teaspoon fresh grated ginger more to taste
  • 1 teaspoon honey or permitted sweetener
  • salt to taste
  • 0.5 cup toasted almonds, walnuts or pumpkin seeds for garnish

Instructions
 

  • Mix the bok choy and celery in a bowl. Whisk together dressing ingredients in a separate bowl, and combine with vegetables. Garnish with nuts or seeds.  (Recipe♦604)
