Paleo Bok Choy Salad

Ingredients
- 8 baby bok choy cleaned and sliced thin on diagonal
- 8 celery stalks cleaned and sliced thin on diagonal
- 0.5 cup olive oil
- 0.25 cup fresh lime juice
- Dressing:
- 1 teaspoon mustard
- 1 teaspoon fresh grated ginger more to taste
- 1 teaspoon honey or permitted sweetener
- salt to taste
- 0.5 cup toasted almonds, walnuts or pumpkin seeds for garnish
Instructions
- Mix the bok choy and celery in a bowl. Whisk together dressing ingredients in a separate bowl, and combine with vegetables. Garnish with nuts or seeds. (Recipe♦604)
