Peach Cobbler

Ingredients
- 2 cups pecans
- 0.5 cup unsweetened dried shredded coconut
- 1 teaspoon fresh lime juice
- 1 teaspoon cinnamon
- 8 medjool dates
- 5 ripe peaches
- 0.5 teaspoon fresh lime juice
- 0.5 teaspoon coconut nectar
Instructions
- For the Crumb Topping: Put all crumb topping ingredients (the first 5 ingredients) in food processor with “S” blade and process until crumbly. Do not overprocess.For the Filling: Peel and thinly chop 4 of the 5 peaches. Spread chopped peaches on bottom of glass pie plate. Peel and halve remaining peach and place in food processor with fresh lime juice and coconut nectar. Process until smooth. Add more lime juice or coconut nectar if needed. Stir over chopped peaches in pie plate. Spoon crumb topping over chopped peaches. (Recipe #623)
