Puerto Rican Beef

Ingredients
- 1 pound grass fed ground beef
- 1 onion sliced
- 1.5 bell peppers mixed green, red and yellow, sliced
- 3 tablespoons olive oil
- 0.5 tablespoon ground cumin
- 1 teaspoon ground coriander
- 0.5 tablespoon turmeric powder
- 1 tablespoon dried oregano
- 1 pinch saffron threads optional
- sea salt and pepper to taste
- 1 bunch kale chopped
- 0.5 cup pimento stuffed green olives coarsely chopped
- 3 sweet potatoes cooked and mashed
- 1 avocado
Instructions
- Heat a large skillet over medium high heat. Brown the ground beef. Add peppers, onions, and olive oil and saute until the onions and peppers are tender. Add all the spices and mix well. Add kale and green olives, continue cooking stirring often until the kale is tender, about 4-5 minutes. Serve over mashed sweet potatoes garnished with sliced avocado. (Recipe #653)
