Pumpkin Chia Seed Pudding

Ingredients
  

  • 0.25 cup chia seeds
  • 1 tablespoon vanilla extract
  • 0.5 cup cashews soak in water for 2-6 hours, drained and rinsed
  • 1.5 cups water
  • 0.25 teaspoon sea salt
  • 1 can pumpkin 14-16 ounce can
  • 1 tablespoon pumpkin pie spice
  • dash sweetener of choice monkfruit or maple syrup
  • berries for garnish

Instructions
 

  • Put all ingredients except chia seeds in a blender and blend until completely smooth. Pour into bowl and add chia seeds.Let sit for 10 minutes, whisking a few times to prevent clumping.Leave in the fridge for 2 hours or until completely chilled.Remove and divide into bowls.Store leftovers in the fridge for up to 5 days.Garnish with berries if you'd like. garnish with berries.
