Pumpkin Pie Overnight Oats

Ingredients
  

  • 1 cup rolled oats
  • 1.5 cups milk dairy or plant based
  • 2 pinches cinnamon
  • 1 pinch nutmeg
  • 0.25 cup unsalted pumpkin seeds
  • 0.666667 cup canned pumpkin puree not pumpkin pie mixed pumpkin
  • 2 banana
  • 1 maple syrup to taste

Instructions
 

  • 1. Submerge the rolled oats in milk using roughly 1.5 times as much liquid to rolled oats.2. Cover the oatmeal the put it in the refrigerator overnight. The next morning you will find soft fresh tasting oats that won't stick to the bottom of the pan or boil over like cooked oats.3. Mix in the banana, cinnamon, nutmeg, unsalted pumpkin seeds and pumpkin puree. Sweeten lightly to taste. 

Notes

Note: No unsalted pumpkin seeds? Any other seed or nut will do. No canned pumpkin? Sweet potato puree will work just as well.
