Purple Potato Chips

Watch for purple regular or sweet potatoes in the fall farmers markets for a colorful, crunchy treat!

Ingredients
  

  • 3 purple regular or sweet potatoes
  • 0.5 teaspoon salt
  • 1 tablespoon olive oil
  • 1 teaspoon dried hers oregano, Herbs de Provence, or the like

Instructions
 

  • Preheat the oven to 400 degrees. Wash and thinly slice the potatoes. A mandolin or spiralizer works nicely here. Mix the salt, herbs, and olive oil in a large bowl. Mix the potatoes in the bowl, coating each with oil. Tip: the longer you mix, the less oil you need. Spread the potatoes thinly in one layer on a baking sheet (lined with parchment paper makes easier cleanup). Bake for 5 minutes. Check, turn, and check again. Depending on the moisture content of the potato, they may crisp up in as little as 7 to 20 minutes. Once they are dry, they can burn quickly, so keep a close eye on them.   (Recipe #662)
