Ingredients
  

  • olive oil to coat pie plate
  • 0.25 cup almond meal to coat pie plate
  • 1 small onion chopped
  • 1 red pepper chopped
  • 4 ounces crumbled goat cheese
  • 5 eggs
  • 0.5 cup half and half
  • 1 firm tofu chopped
  • 1 dash salt

Instructions
 

  • Coat 9" pie plate with oil. Dust plate with almond meal. In a saute pan, saute onion and red pepper until soft, and add to the bottom of pie plate. Sprinkle goat cheese on onions and peppers. Mix eggs, half and half, tofu and salt, and pour over other ingredients in pie plate. Bake at 375 degrees for 40-45 minutes until a knife comes out clean. 

Notes

To use less egg yolks, you can replace 5 whole eggs with 3 eggs and 4 egg whites. Additionally, if you want to omit the cheese or the tofu, you can add 1/2 cup chopped spinach or broccoli (cooked first and drained).  (Recipe #664)
