Quinoa Tabbouleh 1
Servings 8 small servings
Ingredients
- 2 cups quinoa uncooked
- 1 lemon juiced
- olive oil equal amount to lemon juice
- 4 drops liquid stevia
- 0.25 teaspoon Celtic sea salt
- 1 package watercress
- 0.333333 bunch dill
- 0.333333 bunch parsley
- 1 mint
- 0.666667 cup chopped walnuts
- 0.25 cup minced red onion
Instructions
- Cook quinoa according to directions on package. Whisk together the olive oil, lemon juice, stevia and salt, and set aside. Chop the watercress and herbs, and combine with the nuts and onion. Toss salad with dressing, and serve. (Recipe #673)
