Raw Beet, Carrot & Citrus Slaw

Course Salsas, Salads & Slaws
Ingredients
- 3 beets
- 6 carrots mixed colors are fun, but not necessity
- 1 parsnip
- 3 citrus fruits orange, grapefruit, or tangerine, etc
- citrus vinaigrette *see recipe link below
Instructions
- Peel root vegetables. Using a spiralizer, mandolin, or food processor, finely shred the roots. Peel and segment the citrus fruit. Cut larger segments into bite-sized pieces. Toss roots, citrus, and vinaigrette together. Serve. (Recipe #691)
