Raw Beet Slaw

Ingredients
  

  • 2 beets medium in size
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 0.5 cup toasted walnuts optional
  • 0.5 cup crumbled feta cheese optional
  • salt to taste if permitted

Instructions
 

  • Remove tough, rooty bits and scrub the beets. Shred in a food processor. Place in a bowl and drizzle on the vinegar and olive oil. Add salt if permitted. The salad is delicious unadorned, but it holds up with additions of toasted walnuts and/or crumbled feta cheese.  (Recipe #690)
