Raw Beet Slaw

Ingredients
- 2 beets medium in size
- 2 tablespoons white balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 0.5 cup toasted walnuts optional
- 0.5 cup crumbled feta cheese optional
- salt to taste if permitted
Instructions
- Remove tough, rooty bits and scrub the beets. Shred in a food processor. Place in a bowl and drizzle on the vinegar and olive oil. Add salt if permitted. The salad is delicious unadorned, but it holds up with additions of toasted walnuts and/or crumbled feta cheese. (Recipe #690)
