Raw Zucchini Salad with Sun Dried Tomato Dressing

Ingredients
- 4 zucchini medium sized
- 4 cloves garlic
- 0.5 cup sun dried tomatoes
- 1 fresh basil more to taste
- 0.25 cup olive oil
- 1 tablespoon white balsamic or other light vinegar
- 1 dash salt
Instructions
- Coursely grate the zucchini and set aside in a bowl. Rehydrate the sun dried tomatoes with hot water. Drain but don’t dry. In the food processor, pulse together the tomatoes, garlic cloves, basil, and the vinegar. While mixture is processing, slowly drizzle in the olive oil until it forms a thick dressing. Combine with the grated zucchini, add salt to taste, and serve. (Recipe #701)
