Red & Green Tomato Salsa 2

Ingredients
- 3 red tomatoes
- 3 green tomatoes
- 1 cucumber
- 1 green pepper
- 1 poblano green pepper
- 1 bunch fresh parsley remove stems
- 6 shallots minced
- 1 clove garlic minced
- 1.5 piece of fresh ginger grated
- 0.25 cup olive oil
- 0.25 cup white balsamic vinegar
- 1 ume plum or apple cider vinegar
Instructions
- Chop the tomatoes, cucumber, peppers and parsley, and combine in a bowl. Add the shallot, garlic and ginger, and mix into the salad. Whisk or blend the olive oil and the vinegars. Coat salad and blend well. Adjust seasonings and/or vinegars to taste. (Recipe #703)
