Roasted Yams

Ingredients
- 6 medium yams
- 2 tablespoons coconut oil
- dash coarse salt
- dash black pepper
- 1 tablespoon dried herbs rosemary or sage
Instructions
- Preheat oven to 400°F. Peel and wash the yams. Cut into one-inch cubes. Place oil in a roasting pan and toss the yams to coat. Sprinkle with salt, pepper, and dried herbs and toss. Bake, tossing every ten minutes or so, until done, about 45 minutes. (Recipe♦732)
