Rubbed Kale with Honey Mustard Vinaigrette

Ingredients
  

  • 2 bunches kale
  • 0.333333 cup olive oil plus more for rubbing
  • 1 teaspoon sea salt half for rubbing
  • 2 tablespoons cider vinegar
  • 1 tablespoon brown mustard
  • 1 clove garlic
  • 2 teaspoons honey

Instructions
 

  • Wash and drain the kale. Remove spine from kale leaves. Tear the leaves into bite-size pieces and massage them with a drizzle of olive oil and 1/2 teaspoon of salt (or to taste). Taste it - add more salt if desired or if too salty, don't salt the dressing.Blend the olive oil, vinegar, mustard, garlic, honey and 1/4 teaspoon salt (to start) in a blender. Adjust taste and add to the massaged kale.  (Recipe #739)
