Salmon Quiche

Ingredients
  

  • olive oil to coat pie plate
  • 0.25 cup almond meal to coat pie plate
  • 1 pound salmon fillet
  • 5 eggs
  • 0.666667 cup half and half
  • 1 dash salt
  • 4 ounces crumbled goat cheese

Instructions
 

  • Coat a 9" pie plate with oil, then dust with almond meal. Chop salmon into 1/4" pieces and place in pie plate. Sprinkle goat cheese over salmon. Mix eggs, half and half, salt and pour over salmon and cheese. Bake at 375 degrees for about 45 minutes, until a knife comes out clean.  (Recipe #747)

Notes

To use fewer egg yolks, you can replace 5 whole eggs with 3 eggs and 4 egg whites.
