Shredded Beets with Celery and Dates

Ingredients
  

  • 4 beets peeled
  • 3 celery stalks chopped
  • 0.5 cup pitted dried dates chopped
  • 3 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 0.25 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • celery leaves for garnish

Instructions
 

  • Mix dates, lemon juice, oil, salt and pepper in a large bowl. Stir in chopped celery.Shred the beets using spiralizer or food processor, and gently stir them into the mixture. Garnish with celery leaves and serve.  (Recipe #761)
