Smoky Ground Turkey Portabella Mushrooms

Ingredients
  

  • 1 pound ground turkey
  • 0.5 onion chopped and sauteed
  • 0.5 red pepper finely chopped
  • 0.5 zucchini grated
  • 0.5 yellow squash grated
  • 0.5 carrot grated
  • 0.5 teaspoon smoked paprika
  • 1 chipotle pepper minced
  • salt and pepper to taste
  • 6 portabella mushrooms

Instructions
 

  • Mix together all ingredients except the mushrooms. Prepare the mushrooms by pulling the outer skin from the mushrooms and scraping the dark gills from them. Line a baking tray with foil. Place mushrooms on the lined tray and press turkey mixture on top of mushrooms. Bake at 350 degrees for about 20 minutes.  (Recipe #772)
