Sprouted Lentil Salad
Servings 4 servings
Ingredients
- 2 cups sprouted lentils or crunchy sprout mix
- 1 cucumber diced small
- 1 package grape tomatoes halved
- 0.25 cup minced red onion
- 0.5 cup sunchokes diced
- 0.25 bunch fresh cilantro chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon white balsamic or other light vinegar
- 2 teaspoons mixed italian seasonings
- salt and pepper to taste
- 2 dates or a few drops of stevia optional
Instructions
- Combine the lentils with the diced/chopped vegetables and cilantro. Whisk together remaining ingredients for the dressing. If you use the dates, blend dressing in a food processor. Toss salad with dressing and serve. (Recipe #793)
