Sprouted Lentil Salad

Ingredients
  

  • 2 cups sprouted lentils or crunchy sprout mix
  • 1 cucumber diced small
  • 1 package grape tomatoes halved
  • 0.25 cup minced red onion
  • 0.5 cup sunchokes diced
  • 0.25 bunch fresh cilantro chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon white balsamic or other light vinegar
  • 2 teaspoons mixed italian seasonings
  • salt and pepper to taste
  • 2 dates or a few drops of stevia optional

Instructions
 

  • Combine the lentils with the diced/chopped vegetables and cilantro. Whisk together remaining ingredients for the dressing. If you use the dates, blend dressing in a food processor. Toss salad with dressing and serve.  (Recipe #793)
