Sukkah Harvest Quinoa

Ingredients
- 1 quinoa 12 oz
- 2 medium yams cooked, peeled and cubed
- 1 large red pepper cored and diced
- 5 scallions chopped
- 3 ounces cashews
- salt to taste
Instructions
- Cook the quinoa by package directions. Microwave yams with skin until soft. Cool, peel and cube. Combine all ingredients. Add salt to taste. Sprinkle with cashews. (Recipe #797)
