Sukkah Harvest Quinoa

Ingredients
  

  • 1 quinoa 12 oz
  • 2 medium yams cooked, peeled and cubed
  • 1 large red pepper cored and diced
  • 5 scallions chopped
  • 3 ounces cashews
  • salt to taste

Instructions
 

  • Cook the quinoa by package directions. Microwave yams with skin until soft. Cool, peel and cube. Combine all ingredients. Add salt to taste. Sprinkle with cashews.  (Recipe #797)
