Summer Squash with Sun-dried Tomatoes

Servings 6 servings

Ingredients
  

  • 8 small summer squash enough to make 8 cups chopped
  • 8 sun dried tomatoes
  • 1 yellow onion sliced thinly
  • 4 cloves garlic crushed
  • 10 leaves of basil chopped
  • salt and pepper to taste
  • olive oil enough to coat the pan

Instructions
 

  • Heat a medium saucepan with olive oil over medium heat. Stir in crushed garlic, squash, onions and tomatoes. Stir fry veggies for a few minutes. Add the basil, salt and pepper. Add a little water if the pan is dry, cover and allow to steam for a couple minutes. Test for doneness and add fresh basil just before serving.  (Recipe #798)
