Sweet Potato Salad 1

Ingredients
  

  • 1 pinch salt more to taste
  • 4 large sweet potatoes or garnet yams
  • 0.25 cup olive oil
  • 1 tablespoon dried oregano
  • 1 small red onion minced
  • 0.333333 bunch parsley chopped fine
  • 1 lemon juiced

Instructions
 

  • Wash and peel the sweet potatoes or yams. Cut into cubes and place in a roasting pan. Drizzle with olive oil, salt and dried oregano, and toss together. Roast at 350 degrees until soft, flipping once or twice, about 30-40 minutes. Remove from oven and allow to cool. Combine with onion, parsley, and lemon juice and serve at room temperature.  (Recipe #809)
