Ingredients
- grape tomatoes halved
- 4 cups leafy greens spinach, kale, chard
- 1 cup leftover roasted vegetables
- 1 cup cooked lentils
- 1 cup cooked mushrooms
Instructions
- Heat olive oil in a skillet over medium heat. Saute tomatoes until they start to brown, about 4 minutes. Remove to a plate. Saute the greens for about 4 minutes. Remove to a plate. Warm the roasted vegetables, mushrooms and lentils, individually or in sections of the same pan.Whole 30 compliant. (Recipe #865)
