Veggie Wraps with Sweet Avocado Dressing

Ingredients
- 16 leaves like Romaine lettuce, or collards
- 2 broccoli seed sprouts or other delicate sprout
- 5 carrots grated
- 2 cups raw nuts soaked 2 hours and chopped fine
- 1 cup dried apricots minced
- 2 mangoes diced small
- 3 tablespoons coconut oil or more to taste
- 2 limes juiced
- 1 cup basil shredded; Preferably Thai basil
- salt to taste
Instructions
- Pull the sprouts apart and combine by hand with the other ingredients. Roll in leaf wraps. Dress with a dollop or a drizzle of Sweet Avocado Dressing. (Recipe #884)
