Warm Arugula Salad

Servings 2 large servings
Ingredients
- 7 ounces arugula
- 6 strips bacon diced
- 2 shallots diced; can use 1 small onion in place of 2 shallots
- 0.25 cup extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 0.5 cup walnuts or pecans chopped
- salt and pepper to taste
Instructions
- Brown the diced bacon in a frying pan until mostly crisp. Add shallots (or onion) and sauté with bacon. Add oil and heat until warm. Pour mixture over arugula, add balsamic vinegar and mix well. Add salt and pepper to taste, top with nuts, and serve immediately. (Recipe #888)
